What you'll learn

As a cookery student, you’ll be taught by some of the best in the business in our specialist training kitchens with state-of-the-art equipment.

Learn all facets of working in a professional kitchen including:

  • How to prepare and cook appetisers and salads, poultry and game, seafood, meat, hot and cold desserts, pastries, cakes, and yeast goods.
  • Master the basics like stocks, sauces, soups, vegetables, eggs and pasta dishes.
  • Learn key industry skills such as teamwork, food safety, hygiene, and organising supplies.

You’ll also develop real skills and experience working in The Gordon’s professional venues: Cafe on Track and the Davidson Restaurant.

    In class delivery - predominately face to face course content conducted at a specific location

    Online delivery - online course content with the exception of assessments and work placement

Delivery

You can choose from three delivery modes:

  • On-campus full-time: you can expect approximately 20-30 hours of class attendance each week.
  • On-campus part-time: you will attend one day per week.
  • Apprenticeship: you will be employed in the industry and undertake study with us part-time over 5-6 weeks per year for block release, or one day per week for day release.
  • Ask us about our new blended training model which incorporates monthly workshops and workplace learning.

Entry requirements

  • Applicants must be aged 17 or over
  • Applicants are expected to have language, literacy, numeracy and communication skills to at least Year 10 level.
  • Basic computer skills
  • Special consideration may be given to students who are aged under 17, and may be required to complete additional paperwork and/or assessment.
  • Apprenticeship and traineeship applicants must be currently employed under a training contract and referred by their employer.

Recognition of prior learning

Each qualification is made up of units of study. To gain RPL, you will need to demonstrate that you have the required skills and knowledge to meet the competencies of the unit.

Assessment for this course is based on:

  • Hands-on projects
  • Workplace tasks
  • Industry placement
  • Exam

Payment options

Course fees are made up of three components; tuition, student amenities and materials fees. Due to the different level of Government subsidy available to students as published below, there are three possible fee levels for tuition fees; concession, standard and full fee. All levels of tuition available for this course are listed in the table below. Only one will be applicable to you.

  • Concession Tuition – AUD $519
  • Standard Tuition – AUD $2,577
  • Full Fee Tuition – AUD $17,134
